Got leftover pulled pork? Make these quick and easy Pulled Pork Quesadillas for a quick and easy lunch or dinner recipe. Tons of flavor from BBQ sauce, pulled pork and cheese all sandwiched in between two crunchy tortillas.

One thing I love to do is make a big batch of something that I can use to make a few dinners during the week. Pulled pork is one of my favorites because it’s so easy to make in a slow cooker or Instant Pot and the leftovers keep really well. Hello, easy lunches and dinners! And my favorite way to use it? Pulled Pork Quesadillas! This is a quick and easy dinner your whole family will love – tender meat, BBQ sauce and melty cheese tucked into a crispy tortilla. It’s so good!

It’s a delicious twist on a regular quesadilla and a fun way to switch things up! I like to make some guacamole or cowboy caviar to go on the side with tortilla chips – the kids love it! Sometimes Jason and I will make a couple of margaritas when we want to treat ourselves, especially if it’s a Friday night!

I have to warn you, though – once you try these easy quesadillas you’ll want to make them all the time! You can also make these with shredded chicken if pork’s not your thing. It works really well, too!

Five Ingredient Pulled Pork Quesdillas!

  • Olive oil
  • Shredded cheese – I like a cheddar/Monterey jack mix or you can use all cheddar. You could also use pepper jack cheese!
  • Flour tortillas – I like to use the large 10-inch flour tortillas, but if you want smaller ones you can use the 8-inch ones.
  • BBQ sauce – pick your favorite store-bought brand.
  • Pulled pork – We like using leftover Crock Pot or Instant Pot pulled pork

How to Assemble and Cook Them!

  • Heat the olive oil in a large non-stick skillet over medium heat.
  • Place one tortilla in the skillet, top with some meat and cheese and then place another tortilla on top.
  • Cook for a couple of minutes or until the bottom tortilla is browned and crispy.
  • Carefully flip the tortilla over and cook it on the other side for a few minutes. Once it’s crispy on both sides it’s done!

Recipe Tips

  • This recipe makes four quesadillas and I cook them one at a time. If you want to keep them warm you can place the cooked ones on a sheet pan and pop them in a warm oven while you finish the rest.
  • This recipe easily scales up or down depending on how many you want to make!
  • You can serve them just as they are or add a dipping sauce on the side – some extra BBQ sauce works great or try some homemade ranch dip, too!
  • They are best when they are made – the leftovers don’t keep well because the tortillas get soggy when they sit in the fridge. So, it’s the perfect excuse to eat them all in one sitting! Trust me, we have no problem doing that!
  • I love to use boneless pork shoulder, but you can also use Boston butt or pork loin. I have a lot of details about making it in my crockpot pulled pork post so be sure to check it out!

Pulled Pork Quesadilla

Crunchy Quesadillas stuffed with leftover pulled pork, cheese and BBQ sauce for an easy lunch or dinner recipe!

Ingredients

  • 2 Tbsp olive oil
  • 2 c. shredded cheese
  • 8 flour tortillas
  • 1/2 c. BBQ Sauce
  • 3 c. pulled pork

Instructions

  • Pour the oil on the bottom of the skillet and heat over medium heat. Place one tortilla on the pan. Top with pulled pork, cheese and BBQ sauce. Top with another tortilla on top.

  • Cook until bottom tortilla is browned, flip over and cook until other side is crispy and browned; about 2 minutes per side.

  • Slice each quesadilla and serve.
